Recipe Amish Noodles

Does anyone know how to make dumpling dry noodles?
My stepmother says there are some Amish about that make some of the best ball mass of dry noodles (which can be stored in a closet). Does anyone have a recipe or know what I'm talking about. Please help
Dumplings and "Noodles" are the same, the shape is what defines them and the noodles are good, and then wide (flat), meatballs are square or round (up). The recipes are the same, except the ball of dough will be 1 / 4 tsp. Yeast is added to the basic formula. Basic formula for "store" noodles / Flour dumpling is 2C, 1/2c water, 1 / 2 tsp. salt, launched and dried for 45 minutes, rolled and dried an additional 30 minutes, cut into desired shape, save in an airtight container.
